Quality cubes of venison meat, handcrafted from front shoulder or haunch, ideal for a slow cooking venison casserole or venison stew, and can serve large groups where the timing of the meal is unsure.

VENISON CASSEROLED IN RED WINE RECIPE

SERVES 4-6

2lbs venison casserole 

6oz mushrooms

6 oz streaky bacon                                       

4 oz butter

2 cloves garlic crushed                                 

Parsley

1 large onion finely chopped                      

20 baby onions

Bottle of inexpensive red wine                    

Bouquet garni/salt/ pepper/flour/olive oil

 

In a flameproof casserole, brown venison quickly in oil and butter.  Add onion and cook until transparent.  Add flour then bouquet garni, garlic and seasoning.  Cover with wine and cook for two hours at low heat. Separately crisp bacon and cook baby onions until golden.  Add to casserole and cook 30 mins more.  Add mushrooms, cook another 15 minutes.  Remove bouquet garni, add parsley and serve with rice or roast potatoes.
